Shana's Favorite Sourdough Bread Recipe

My favorite sourdough bread recipe

This recipe may take some fiddling for your personal teste and environment

Ingredients

120 grams sourdough starter(fed or discard)
100 g Sourdough Starter
500 g Unbleached All Purpose Flour
120 g flour of your choice
300 g water
10 g salt

Directions

  1. Combine sourdough starter, flour, and water in a bowl. Mix thoroughly (this may require your hands!)
  2. Mix in Salt and stretch and fold. Allow to rest 30 minutes
  3. Do two more stretch and folds with a 30 minute rest in between.
  4. Cover the bowl with plastic wrap or a damp towel and allow to sit for 10-12 hours depending on the temperature of your house and your starter.
  5. Remove the dough from the bowl and shape the dough and place in a floured banneton or a bread pan lined with parchment paper. Preheat oven to 450 degrees and allow dough to rest for 30 minutes.
  6. Score dough and bake for 35 minutes
